Simply Sausages - outdoor reared pork, smoked bacon and leek sausages

ingredients:
1 pack of Simply Sausages
outdoor reared pork sausages with Italian inspired herbs
1 loaf foccacia bread
1 tin good quality chopped plum tomatoes
1 medium onion, finely chopped
3 cloves garlic, crushed
150g dry cured, smoked streaky bacon, sliced into 1-2cm slices
2 glasses red wine
2 tbsp good olive oil
½ tsp dried oregano
parmesan shavings
bunch fresh basil
salt & pepper to taste

method:
Pre-heat oven to 200ºC, Gas 6

1. Prepare the sauce: Heat some olive oil in a saucepan over a medium to high heat and fry bacon until crispy (approx. 3-4 mins). Add onions and garlic and continue to fry for 2-3 mins until onions are soft.

2. Add tomatoes and wine and season with salt, pepper and oregano to taste. Reduce heat to medium and allow to simmer for 15 minutes stirring occasionally.

3. Meanwhile prepare the sausages according to packed instructions. For best results shallow fry.

4. Meanwhile, brush the foccacia lightly with olive oil and heat in the oven for 10 minutes.

5. Slice the bread into 3 equal portions and place onto plates. Top each portion with 2 cooked sausages and drizzle with the sauce. Garnish with fresh basil leaves and Parmesan shavings to serve.
